The Cajun Express Smoker is the fastest smoker in the bayou! You can cook baby back ribs in only 35 to 40 minutes, or an entire brisket in two hours. This smoker works off of a patented smoking process that utilizes a pressure / vacuum regulator that revolutionizes cooking times. The regulator varies the PSI inside the sealed cooking chamber, breaking down the connective tissues in meats much faster, giving you fall off the bone tender meats in record times! You can come home from work and have a 3 pound chicken fully smoked in just 30 minutes. The smoker includes two 17 X 13 1/2 inch stainless steel cooking grates that pull out for easy access to food and smoker tray. The drip pan follows the cooking grate to help eliminate mess. The smoker has slide rails for the included second cooking grate and a removable side shelf. The food grade, high temperature door seal, heavy duty latch and adjustable front hinge all insure a proper seal.
